RECIPE - Derby Day Cocktail


A perfect cocktail for Spring & Summer that is fresh, unique, and made with a homemade Lavender-Mint syrup.

Instructions - Lavender Mint Syrup

Step 1: Put lavender flowers, sugar & water in a small saucepan. While stirring to dissolve sugar, bring to a boil then add mint leaves.

Step 2: Reduce heat and simmer on low for about 5 minutes.

Step 3: Transfer lavender syrup to a glass jar and let chill in the fridge. Strain out the lavender & mint after 1 hour and continue to let it chill.

Keeps in the refrigerator for up to a week.

Instructions - Derby Day Cocktail

Step 1: Add all cocktail ingredients to a mixing glass. Add ice and stir until chilled. Be careful since prosecco will want to bubble up.

Step 2: Strain into a chilled coupe or serve over ice in a low ball glass. Garnish with an lemon peel.


Lavender Mint Simple Syrup

  • About 5-7 Fresh Lavender Flowers
  • 1/2 Cup - Sugar
  • 1/2 Cup - Water
  • 1/4 Cup - Fresh Mint Leaves, Chopped.

Derby Day Cocktail

  • 1 Tbsp - Lavender Mint Syrup
  • 2 oz - Gin
  • 4 oz - Chilled Prosecco or Champagne
  • 1 Lemon - Squeeze to Taste, & Lemon Peel Twist.
