Asparagus & Pea Quiche with Havarti

This Asparagus & Pea Quiche with Havarti makes a beautiful

Ingredients
• 1 frozen pie crust, 9 inch
• 8 spears asparagus, ends
trimmed off and cut into 1-inch pieces
• 1 cup peas, fresh or frozen
• 2 green onions, chopped
• 6 large eggs
• 1/2 cup havarti cheese,
grated
• 1/2 cup milk
• 1 1/2 teaspoon fresh thyme
• 1 teaspoon salt
• 1/2 teaspoon pepper
Instructions
- Preheat
oven to 375°F. Place a frozen 9-inch pie crust in a pie dish, pierce the
bottom with a fork, line with parchment, and add pie weights. Blind bake
10-15 minutes, then remove parchment and weights.
- In
a bowl, whisk together eggs, milk, Havarti cheese, thyme, salt, and
pepper.
- Arrange
asparagus, peas, and green onions in the crust, then pour the egg mixture
over the vegetables.
- Bake
40-45 minutes, until the quiche is set and lightly golden. Let cool
slightly before slicing and serving.
