RECIPE - Blue Smoked Slaw

Recipe

This sweet & smokey slaw goes well with any bbq dish.

PREP TIME: 15 minutes

TOTAL TIME: 3 hours

SERVES: 4-6

Instructions

Step 1: Stabilize smoker at 250 degrees.

Step 2: Make slaw dressing by combining mayo, red onion, scallions, sugar, apple cider vinegar & mustard. Set aside.

Step 3: Mix garlic and bbq rub until well combined. 

Step 4: Core cabbage & fill with garlic mixture.

Step 5: Using heat deflectors, smoke for 2-3 hours depending on size.

Step 6: Remove from smoker & cut into quarters. Let cool for 5 minutes.

Step 7: Slice into thin strips & toss well, incorporating garlic mixture

Step 8: Add slaw dressing & mix until well combined.

  • 1 large head of cabbage
  • 1/3 cup minced garlic
  • 1 small red onion, diced
  • 1 Cup scallions, sliced

From the Market/Pantry

  • 3 tbsp bbq rub
  • 1/2 cup olive oil
  • 3 cups mayo
  • 1/4 cup sugar
  • 1/3 cup apple cider vinegar
  • 1/3 cup whole grain mustard
